Dairy Free Pumpkin Pie Smoothie

Here we are – well into November with pumpkin season in full swing! Not sure if you know this about me, but love pumpkin! Pumpkin pie … pumpkin smoothies … you know a pumpkin freak. I’m generally a warm weather person, but I have a weakness for squash, sweet potatoes and actually all root vegetables which makes the cold winter months more bearable.

I’ve made other pumpkin smoothies, but this one is dairy free. I hope you enjoy!

Dairy Free Pumpkin Pie Smoothie
Serves: 2

Ingredients:
1/4 cup canned pumpkin purée (or fresh roasted, cooled)
1/4 cup raw pecans
1 cup ice cold water
2 teaspoons flaxseeds or chia seeds
1 frozen banana, cut into thick slices
2 or 3 pitted dates
1/4 teaspoon cinnamon
1/2 inch knob of fresh ginger
1/8 teaspoon nutmeg
4 ice cubes

Directions:
Place all ingredients except the ice cubes in a high speed blender (such as a Vitamix) and process until smooth and creamy. Add the ice cubes and process again until smooth and creamy. Pour contents into glass and sip with your straw.
